Smoked Salmon Preparation

    Prepare the Salmon

    In a bowl, mix sea salt and brown sugar. Rub this mixture all over the salmon fillet. Cover and refrigerate for at least 4 hours or overnight.

    Smoke the Salmon

    Preheat your smoker to 225°F (107°C). Soak the smoking chips in water for 30 minutes, then drain. Place the salmon on the smoker rack and add the soaked chips to the smoker. Smoke the salmon for about 1-2 hours, or until it reaches an internal temperature of 145°F (63°C).

Caper Lemon Curd Créme Fraiche

    Make the Créme Fraiche

    In a bowl, mix the creme fraiche, lemon juice, lemon zest, and chopped capers until well combined. Set aside.

Bagel and Salad Assembly

    Prepare the Salad

    In a mixing bowl, combine the trimmed watercress and sliced red onion. Drizzle with olive oil and season with salt and pepper to taste. Toss gently.

    Assemble the Dish

    Spread a generous amount of the caper lemon curd créme fraiche on the toasted bagels. Top with slices of the smoked salmon, and serve with the watercress salad on the side.
