    In a large saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and gradually stir in 1 cup of corn grits. Reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally until thickened.

    Remove the grits from heat and stir in 1 cup of shredded sharp cheddar cheese until melted. Allow the mixture to cool slightly, then whisk in 2 large eggs until fully combined.

    Mix Dry Ingredients

    In a separate bowl, combine 1 cup of cornmeal, 1 tsp of baking powder, and 1 tsp of black pepper.

    Combine Mixtures

    Gradually fold the dry ingredients into the cheesy grits mixture until well blended.

    Form Cakes and Fry

    Heat 1 cup of vegetable oil in a large skillet over medium heat. Scoop the grit mixture into the skillet and form into cakes, about 3 inches in diameter. Fry for 3-4 minutes on each side until golden brown and crispy.
