Make the Peach Puree

In a blender, add fresh ripe peaches (about 3-4), and blend until smooth. If necessary, strain the puree through a fine mesh sieve to remove any pulp for a smoother texture.

Prepare the Simple Syrup

In a small saucepan, combine equal parts sugar and water (e.g., 50ml of sugar and 50ml of water). Heat over medium heat until the sugar dissolves completely. Let it cool before using.

Mix the Base for Bellinis

In a large pitcher, combine the peach puree, simple syrup, and Prosecco. Use a gentle stirring motion to combine, making sure not to lose the fizz of the Prosecco.

Prepare Flavor Purees

For each flavor variation, replace the peach puree in the base recipe with the desired fruit puree (raspberry, strawberry, mango, or passion fruit). Blend the fruit until smooth, and strain if necessary to achieve a silky consistency.

In a separate glass or pitcher, mix the chosen fruit puree with Prosecco (maintaining the same ratio of 1 part puree to 3 parts Prosecco). Stir gently to combine without losing carbonation.
