Clean mussels
Rinse mussels under cold water. Discard any with cracked shells or that do not close when tapped. Scrub the shells and remove beards with a paring knife or by pulling toward the hinge. Put cleaned mussels in a bowl and keep chilled.
Finish and plate
When sauce and mussels are cooked (see sauce section), transfer mussels and sauce to a large serving bowl or leave in the skillet. Add 2–3 tablespoons unsalted butter and swirl until melted to enrich and slightly thicken the sauce. Squeeze the lemon half over the mussels and sprinkle chopped parsley. Taste and adjust salt/pepper as needed. Serve immediately with sliced soppin or crusty bread for dipping.
Optional bread prep
If desired, toast slices of the bread under the broiler for 1–2 minutes per side brushed lightly with one tablespoon melted butter until golden for better sopping.
Bourbon Street sauce
Heat a large, heavy skillet or Dutch oven over medium heat. Add 2 tablespoons vegetable oil. Once shimmering, add the minced shallot and cook, stirring, until softened and translucent, about 2–3 minutes.
Add the minced garlic and grated ginger and cook for 30–45 seconds until fragrant, stirring constantly so they don't burn.
Stir in 1 tablespoon tomato paste and cook 1 minute to caramelize and remove the raw taste.
Pour in 1 cup chicken or seafood stock and bring to a simmer, scraping the bottom of the pan. Stir in 1 teaspoon brown sugar, 1 teaspoon smoked paprika, 1 teaspoon cayenne pepper, 1 teaspoon Creole/Cajun seasoning, 1 teaspoon Worcestershire sauce, 1 teaspoon hot sauce, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper. Simmer gently for 4–6 minutes to let flavors meld and the sauce reduce slightly.
Lower heat to medium-low and stir in 1 tablespoon heavy cream (this smooths the sauce and rounds the heat). Taste and adjust seasoning — add more hot sauce or cayenne for spice or a pinch more sugar if too sharp.
Once mussels are open, remove the lid and allow the sauce to simmer 1–2 minutes so it clings to the shells. Taste one mussel and adjust salt, pepper, or acidity (squeeze more lemon) if needed. Proceed to finishing directions.
