Marinate the Chicken
In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the flour mixture, ensuring it is well-coated. Fry the chicken in batches until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Cook the Eggs
In a non-stick skillet, fry each egg to your desired doneness, seasoning with salt and pepper.

Assemble the Sandwich
On the bottom half of each brioche roll, layer chopped lettuce, a piece of fried chicken, a slice of pepper jack cheese, crushed cherry peppers, a fried egg, and a generous spread of chipotle aioli. Cap with the top half of the roll.
