    Prepare the Vegetables

    In a skillet, heat olive oil or butter over medium heat. Add diced onions and sauté until translucent, about 3 minutes. Then add sliced mushrooms and cook until they are softened, about 3-4 minutes. Finally, add the fresh spinach and cook until just wilted. Season with salt and black pepper. Remove the mixture from the skillet and set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season with a pinch of salt and pepper.

    Cook the Omelet

    In the same skillet, add a bit more olive oil or butter if needed, and pour in the whisked eggs. Let them cook undisturbed for about 2 minutes until the edges start to set.

    Add the Filling

    Once the edges are set, add the sautéed vegetable mixture evenly across one half of the omelet. Sprinkle shredded Swiss cheese on top of the vegetables.

    Fold and Serve

    Carefully fold the other half of the omelet over the filling. Cook for an additional 1-2 minutes until the cheese melts and the eggs are cooked through. Slide the omelet onto a plate and serve with your choice of toast.
