    Cook the Potatoes

    Peel and dice the Yukon gold potatoes into small cubes. In a pot, bring salted water to a boil and add the potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.

    Cook the Sausage

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the andouille sausage, sliced, and cook until browned and heated through, about 5-7 minutes. Remove from skillet and set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs with salt and black pepper. In the same skillet, melt the remaining butter over medium heat. Pour in the eggs and stir gently until they are softly scrambled. Add the cooked potatoes, spinach, and sausage to the eggs, stirring until the spinach wilts.

    Prepare the Hollandaise

    In a small saucepan, melt the pepper jack cheese with a splash of water over low heat until smooth and creamy. If desired, add more water for desired consistency.

    Serve

    Plate the scramble and drizzle the pepper jack hollandaise on top. Serve with your choice of toast.
