    Prepare the Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until they are golden and tender, about 10-12 minutes. Remove from heat and set aside.

    Cook the Sausage

    In the same skillet, add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Add the crushed cherry peppers to the skillet and mix well.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the sausage and peppers. Cook, stirring gently, until the eggs are fully scrambled and cooked through.

    Assemble the Burrito

    Warm the flour tortillas in a separate pan or microwave. On each tortilla, layer the potato mixture, scrambled eggs with sausage and peppers, smashed avocado, and shredded cheddar cheese.

    Roll the Burrito

    Fold in the sides of the tortilla and roll it tightly from the bottom up. Repeat with the second tortilla.

    Cut the burritos in half and serve with a side of ranchero sauce.
