Prepare the Peach Puree
Peel and pit the fresh peaches, then blend them in a blender or food processor until smooth. If needed, add sugar and lemon juice to taste, blending until well combined.

Mix the Bellini
In a champagne flute, pour about 2 tablespoons of the peach puree. Slowly top it off with Prosecco, gently stirring to combine without losing the bubbles.

Garnish with a slice of peach if desired and serve immediately while the drink is bubbly.
