    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut each potato into even strips, approximately 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a large, heavy-bottomed pot, heat the sunflower oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes (First Batch)

    Carefully add a handful of the dried potato strips to the hot oil. Fry for about 3-4 minutes or until they start to turn golden brown, then remove them and drain on paper towels.

    Fry the Potatoes (Second Batch)

    Repeat the frying process with the remaining potato strips. For crispier fries, you can double fry them: let them cool for a few minutes after the first fry, then fry them again for an additional 2-3 minutes.

Serving

    Once all fries are fried, sprinkle with salt and pepper to taste. Serve immediately while hot.
