Burrito Preparation

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. In a medium pot, bring water to a boil, add the diced potatoes, and cook until tender for about 15 minutes. Drain and set aside.

    Prepare the Chorizo

    In a large skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it’s fully cooked and browned. Remove from heat.

    Combine Ingredients

    In the skillet with the chorizo, add the cooked potatoes, lacto-fermented hot sauce, salt, and black pepper. Stir well until the potatoes are evenly coated with the chorizo and sauce mixture. Cook for an additional 2 minutes to heat through.

    Assemble the Burritos

    On a clean surface, lay out a tortilla. Spoon an equal portion of the chorizo and potato mixture onto the center of the tortilla. Top with cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.

    Wrap the Burritos

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat this process with the remaining tortillas and filling.

    Serve the burritos warm, with additional sour cream and lacto-fermented hot sauce on the side if desired.
