Sauté aromatics and vegetables
Heat 2 tbs vegetable oil in a large heavy pot or Dutch oven over medium heat. Add the minced garlic and grated ginger and sauté 30–45 seconds until fragrant. Add the diced onion, sliced carrot, red bell pepper, and sliced shiitake mushrooms. Cook, stirring occasionally, 5–7 minutes until the vegetables start to soften and the onion becomes translucent.
Add liquids and seasonings
Pour in 6 cups vegetable broth and 1 cup water. Stir in 3 tbs light soy sauce, 1 tsp dark soy sauce, 1 tbs rice vinegar, 1 tbs Sambal Oelek (adjust to taste), 1 tsp white pepper, and 1 tsp brown sugar. Bring the mixture to a gentle boil, then reduce heat and let simmer 8–10 minutes so the flavors meld and vegetables become tender-crisp.
Finish with coconut milk and thicken
Lower the heat to medium-low and stir in 1 1/2 cups full-fat coconut milk. In a small bowl whisk 2 tsp cornstarch with 2 tbs cold water to make a slurry, then slowly pour the slurry into the simmering soup while stirring. Simmer 2–3 minutes until the broth slightly thickens. Taste and adjust seasoning with more soy sauce, sambal, or a pinch of salt if needed.

Prepare protein and quick-cook greens
If using tofu, pat 8 oz firm tofu dry and cube it. If using cooked shredded chicken, have 8 oz ready. Add tofu or chicken to the simmering broth and gently simmer 3–4 minutes to heat through and absorb flavor. Add 2 cups halved baby bok choy and 1 cup snap peas to the pot and simmer 2–3 minutes until bok choy is bright green and tender-crisp.
Add fresh herbs and lime
Remove the soup from the heat. Stir in half the thinly sliced green onions (reserve remainder for garnish) and 1/2 cup chopped fresh cilantro. Squeeze the juice of 1 whole lime into the soup, taste, and adjust acidity or salt as desired.
Noodles & garnish
Assemble bowls
Ladle the hot soup with vegetables and protein over the prepared noodles in each bowl. Drizzle 1 tsp toasted sesame oil and up to 2 tsp crispy garlic chili oil over each bowl (optional for extra heat). Garnish with remaining sliced green onions, 1/2 cup fried shallots (divide among bowls), 1 tsp sesame seeds, and a light sprinkle of red chili flakes to taste.
Serve
Serve immediately while hot. Offer extra lime wedges, sambal, or chili oil at the table for guests to adjust spice. Leftovers keep refrigerated up to 3 days; reheat gently on the stove, adding a splash of water or broth if the coconut milk separates.
