    Remove the filet mignon from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

    Season the Steaks

    Rub each steak with olive oil and season generously with salt and black pepper on both sides.

    Preheat the Pan

    Heat a large skillet over medium-high heat. Once hot, add a tablespoon of olive oil.

    Sear the Steaks

    Add the steaks to the hot skillet. Sear for about 4-5 minutes on one side until a golden crust forms.

    Flip and Add Aromatics

    Flip the steaks and add the garlic, thyme, and butter to the pan. Cook for another 4-5 minutes for medium-rare, basting the steaks with the melted butter using a spoon.

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C).
