Base Ingredients

Method

Preparation

  1. 1

    Prepare the Broth

In a saucepan, heat the vegetable broth over medium heat until warm. Keep it on low heat to maintain warmth throughout the cooking process.

  2. 2

    Sauté the Base Ingredients

In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Cooking the Risotto

  1. 3

    Add Rice

Stir in the Arborio rice and cook for about 2 minutes, allowing the rice to become slightly translucent.

  2. 4

    Deglaze with Wine

Pour in the white wine and stir continuously until the wine is mostly absorbed by the rice.

  3. 5

    Add Broth Gradually

Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the broth to be absorbed before adding the next ladle. Repeat this process for about 15-20 minutes until the rice is creamy and al dente.

  4. 6

    Incorporate Seasonal Ingredients

Once the rice is cooked, stir in the chopped asparagus, peas, and spinach. Cook for an additional 3-5 minutes until the vegetables are tender.

Finishing Touches

  1. 7

    Add Cheese and Seasoning

Remove the skillet from heat and stir in the grated Parmesan cheese, chopped basil, lemon zest, salt, and black pepper. Mix well until the cheese is melted and everything is combined.

  2. 8

    Serve

Serve the risotto warm, garnished with additional basil and a sprinkle of Parmesan cheese if desired. Enjoy your seasonal risotto!
