Method

Pasta Preparation

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the linguine and set aside.

Clam Preparation

  1. 2

    Prepare the Clams

Rinse the fresh clams under cold running water to remove any sand or grit. Discard any clams that are open and do not close when tapped.

Sauce Preparation

  1. 3

    Make the Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

  2. 4

    Add the Clams

Add the prepared clams to the skillet and pour in the white wine. Cover the skillet and allow the clams to steam for about 5-7 minutes, or until they open up. Discard any clams that remain closed.

  3. 5

    Combine Pasta and Sauce

Once the clams are opened, add the drained linguine to the skillet. Toss well to combine, adding reserved pasta water a little at a time to loosen the sauce as needed.

  4. 6

    Finish the Dish

Stir in the fresh parsley, lemon juice, salt, and black pepper to taste. Cook for an additional minute to heat through.
