Preparation of Meat and Base

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened and the onion is translucent, about 5-7 minutes.

    Add the ground beef and ground pork to the skillet. Cook until the meat is browned all over, breaking it up with a spoon as it cooks, about 8-10 minutes. Drain any excess fat.

Building the Sauce

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Allow it to simmer for about 2-3 minutes until slightly reduced.

    Add Tomatoes and Stock

    Stir in the canned crushed tomatoes and beef stock. Bring the mixture to a gentle simmer.

    Add the dried oregano, dried basil, salt, and black pepper to the sauce. Mix well.

Cooking the Pasta
