Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm, but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Add Vanilla Extract
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until chilled, about 2 hours.

Once the base is chilled, divide the mixture into three bowls to create different flavors. For strawberry gelato, mix in the pureed strawberries; for chocolate gelato, whisk in the cocoa powder; and for pistachio gelato, fold in the chopped pistachios.

Churn the Gelato
Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to airtight containers and freeze for at least 4 hours or until firm.
