Pasta and Chicken
Sauce and Seasoning
Method
Prepare the Ingredients
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- 2
Cook the Chicken
While the pasta is cooking, season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet and let it rest before slicing it into strips.
- 3
Cook the Bacon
In the same skillet, add the remaining tablespoon of olive oil and cook the bacon or pancetta over medium heat until crispy, about 5-6 minutes. Remove from heat and set aside.
Prepare the Carbonara Sauce
- 4
Mix the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combine Ingredients
Once the pasta is drained, return it to the pot over low heat. Add the cooked chicken, crispy bacon, and the egg mixture. Toss quickly to coat the pasta, ensuring the heat from the pasta cooks the eggs and creates a creamy sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
Serve the Dish
- 6
Plate and Garnish
Serve the Chicken Carbonara immediately, garnished with additional Parmesan cheese and black pepper if desired.
