Marinara Sauce

Preparing the Marinara Sauce

Sauté Garlic
Add the minced garlic and sauté for about 1 minute, until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and optional red pepper flakes. Bring to a simmer.

Simmer the Sauce
Lower the heat and let the sauce simmer for about 20-25 minutes, stirring occasionally.

Finish the Sauce
Taste and adjust seasoning if necessary. Remove from heat and keep warm until serving.
Preparing the Calamari

Set Up Breading Station
In a shallow bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk.

Dredge the Calamari
Dip the calamari rings first into the egg mixture, then into the flour mixture, ensuring they are well coated.

Heat the Oil for Frying
In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari in batches to the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy.

Drain and Keep Warm
Use a slotted spoon to remove the calamari from the oil and place them on a paper towel-lined plate to drain excess oil. Keep warm until all calamari is fried.
Serving

Serve the fried calamari hot with the marinara sauce on the side for dipping. Garnish with fresh basil if desired.
