    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center, and crack the eggs into this well. Add olive oil.

    Mix the Dough

    Using a fork, gradually incorporate the flour into the eggs until the dough begins to come together.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Beef Filling

    Cook the Beef

    In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped onion and garlic, sautéing until softened.

    Increase the heat to medium-high, add the ground beef, and cook until browned and cooked through. Drain any excess fat.

Assembly and Cooking

    After resting, divide the dough into manageable pieces. Roll each piece out to about 1/16 inch thickness using a pasta machine or rolling pin.
