Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center, and crack the eggs into this well. Add olive oil.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped onion and garlic, sautéing until softened.

Increase the heat to medium-high, add the ground beef, and cook until browned and cooked through. Drain any excess fat.

In a mixing bowl, combine the cooked beef mixture, ricotta cheese, Parmesan cheese, egg yolk, salt, black pepper, and nutmeg. Mix until well combined.
