Making the Gelato Base

    Prepare the Base

    In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is steaming, but not boiling.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually pour in about a cup of the warm milk mixture into the yolks, whisking constantly to temper the eggs.

    Combine and Thicken

    Pour the egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract.

    Cool the Base

    Let the mixture cool to room temperature, then refrigerate for at least 4 hours or until completely chilled.

Flavoring and Churning

    Flavor the Gelato

    Divide the chilled base into three separate bowls. In the first bowl, mix in the Nutella until fully combined. In the second bowl, add the vanilla bourbon. In the third bowl, gently fold in the creme fraiche.

    Churn the Gelato

    Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to airtight containers and freeze for at least 4 hours, or until firm.
