Mix the Ingredients
In a large bowl, combine ground beef, ground pork, dry aged beef trimmings, breadcrumbs, egg, minced garlic, chopped parsley, salt, black pepper, and smoked paprika. Mix until well combined.

Shape the Meatballs
Form the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Cook the Meatballs
Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes or until they are browned and cooked through.

Prepare Smoked Pomodoro Sauce
In a saucepan over medium heat, add olive oil, diced tomatoes, and smoked paprika. Simmer for about 15 minutes until thickened. Adjust seasoning with salt and pepper.

Serve
Serve the meatballs topped with the smoked pomodoro sauce, grated Piave cheese, and fresh basil leaves. Pair with a glass of Chianti.
