Method

Preparation

  1. 1

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.

Cooking Red Sauce

  1. 2

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add minced garlic and crushed red pepper flakes, sautéing until fragrant (about 1-2 minutes).

  2. 3

    Add Tomatoes

Pour in the canned crushed tomatoes, adding chopped basil, salt, black pepper, and sugar. Stir to combine and let it simmer for about 10 minutes.

  3. 4

    Add Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels open. Discard any mussels that do not open.

  4. 5

    Serve

Ladle the mussels and sauce into bowls, garnishing with fresh parsley.

Cooking White Sauce

  1. 6

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add minced garlic and chopped shallots, sautéing until translucent (around 3-4 minutes).

  2. 7

    Deglaze with Wine

Pour in the white wine and simmer until reduced by half, about 5 minutes.

  3. 8

    Add Cream and Seasonings

Stir in the heavy cream, adding salt and black pepper. Let it simmer for another 5 minutes.

  4. 9

    Add Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels open. Discard any mussels that do not open.

  5. 10

    Serve

Ladle the mussels and sauce into bowls, garnishing with fresh parsley.
