Method

Preparation

  1. 1

    Clean the Clams

Soak the clams in cold water for at least 30 minutes to remove any sand or grit. Rinse them thoroughly under cold running water.

  2. 2

    Mise en Place

Prepare all your ingredients by mincing the garlic, dicing the shallots and tomatoes (if using red sauce), and chopping the parsley.

Cooking

  1. 3

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced shallots, sautéing until fragrant and translucent, about 2-3 minutes.

  2. 4

    Add Clams

Stir in the cleaned clams and cook for 2-3 minutes, allowing them to open up slightly.

  3. 5

    Add Liquid

Pour in the white wine and vegetable broth (or clam juice). If using red sauce, add the diced tomatoes now. Bring to a simmer.

  4. 6

    Season

Add salt, black pepper, and red pepper flakes to taste. Continue simmering for about 10-15 minutes, or until all clams have opened.

  5. 7

    Finish with Parsley

Once the clams are open, remove from heat and stir in the chopped parsley. Discard any clams that did not open.
