Method
Preparation
- 1
Prepare the Veal
Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. This will help them cook evenly.
- 2
Season the Flour
In a shallow dish, combine the all-purpose flour, salt, and black pepper. Dredge each veal cutlet in the flour mixture, shaking off any excess.
Cooking
- 3
Sauté the Veal
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the veal cutlets to the pan in a single layer. Cook for about 2-3 minutes on each side until golden brown. Remove the veal from the skillet and set aside.

- 5
Make the Sauce
Pour the Marsala wine and chicken broth into the skillet with the mushrooms. Stir well to combine and scrape any browned bits off the bottom of the pan. Allow the sauce to simmer for about 5 minutes.
- 6
Combine and Finish
Return the veal cutlets to the skillet, nestling them into the sauce. Cook for an additional 3-5 minutes, or until the veal is cooked through and the sauce has thickened slightly. Stir in the fresh parsley before serving.
