    Begin by flattening the veal cutlets to about 1/4 inch thickness using a meat mallet or rolling pin. This helps them cook evenly.

    In a shallow dish, combine the flour with salt and black pepper. Mix well to ensure even seasoning.

    Prepare the Egg Mixture

    In another shallow dish, whisk together the eggs and milk until well combined.

    Dredge the Veal

    Coat each veal cutlet first in the seasoned flour, shaking off any excess, then dip into the egg mixture, allowing any excess to drip off.

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.

    Add the veal cutlets to the skillet in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes per side, or until golden brown and cooked through. Transfer the cooked veal to a plate and keep warm.
