Pasta Dough

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center, then add the eggs and olive oil. Use a fork to whisk the eggs and gradually incorporate the flour until combined.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Spinach

    In a pan over medium heat, sauté the garlic in a little olive oil until fragrant. Add the spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool.

    Make the Filling

    In a bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Assemble Ravioli

    Roll Out the Dough

    On a floured surface, roll out the dough into thin sheets, about 1/16 inch thick. You may need to divide the dough into smaller portions to make it easier.

    Fill and Shape Ravioli

    Place a small spoonful of filling (about 1 tablespoon) about 2 inches apart on one sheet of dough. Moisten the edges with water, then place another sheet of dough on top. Press down around the filling to seal, then cut out the ravioli using a ravioli cutter or knife.

    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes. Add cherry tomatoes and cook until they burst and release their juices, about 5-7 minutes.

    Stir in basil leaves, and season with salt and black pepper to taste. Remove from heat.

Cook and Serve

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes until they float to the surface. Remove with a slotted spoon.

    Serve the ravioli topped with the prepared sauce. Garnish with additional Parmesan cheese and basil if desired.
