    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Prepare the Pancetta

    While the pasta is cooking, dice the pancetta or guanciale into small cubes. In a large skillet over medium heat, cook the pancetta until it becomes crispy, about 6-8 minutes.

    Mix Egg and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined. Set aside.

    Combine Spaghetti and Pancetta

    Once the spaghetti is cooked, reserve about 1 cup of the pasta water, then drain the spaghetti. Add the hot spaghetti directly to the skillet with the crispy pancetta (remove from heat to avoid scrambling the eggs).

    Create the Sauce

    Quickly pour the egg and cheese mixture over the hot spaghetti, tossing quickly to coat the pasta. If the mixture is too thick, add reserved pasta water a little at a time until a creamy sauce forms.

    Taste and season the pasta with additional salt and freshly ground black pepper as desired. Toss in chopped parsley if using.
