Preparation of Calamari

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the head and tentacles, and slice the body into rings. Pat dry with paper towels.

    Season the Calamari

    In a bowl, combine the calamari rings with salt, black pepper, and parsley. Mix well and set aside.

Preparation of Red Sauce

    Sauté the Aromatics

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and cook for another minute until fragrant.

    Stir in the crushed tomatoes, red wine, dried basil, oregano, sugar, salt, and black pepper. Bring to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

Cooking the Calamari
