Cooking the Pasta

Boil the Water
In a large pot, bring water to a boil. Add salt once boiling.

Cook the Pasta
Add pasta to the boiling water and cook according to package instructions (usually 8-10 minutes). Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, reserve 1 cup of pasta water, then drain the rest and set aside.
Making the Mushroom Sauce

Sauté the Vegetables
In a large skillet over medium heat, add olive oil. Once hot, add chopped onion and sauté until translucent, about 3-4 minutes. Then add minced garlic and sauté for another minute.

Add Broth and Cream
Pour in the vegetable broth and bring to a simmer. Then stir in the heavy cream, allowing it to thicken slightly for about 3 minutes.

Combine with Pasta
Add the cooked pasta to the skillet, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.

Finish the Dish
Stir in grated Parmesan cheese and black pepper. Cook for another 2 minutes until cheese is melted. Remove from heat and sprinkle with fresh parsley before serving.
