Method

Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards (the fibrous strands) by pulling them away from the shells.

    Sauté Aromatics

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and finely chopped shallots. Sauté for about 2-3 minutes until they become fragrant and translucent.

    Add Mussels and Wine

    Add the cleaned mussels to the pot, followed by 1 cup of white wine (or chicken stock). Cover the pot and steam the mussels for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed.

    Finish with Parsley

    Once the mussels are cooked, stir in 1 tablespoon of chopped parsley. If desired, you can also add crushed red pepper flakes for extra heat.

Cooking the Linguini

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt.

    Cook Linguini

    Add 8 oz of linguini to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.

Sauce Options

    Prepare Red Sauce (if using)

    In the same pot used for mussels, add 1 cup of canned crushed tomatoes, 1 tablespoon of basil, and 1 teaspoon of red pepper flakes. Stir and let simmer for 5 minutes.

    Prepare White Sauce (if using)

    In a separate saucepan, heat 1 cup of heavy cream over low heat. Gradually stir in 1 cup of grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

Combining Everything

    Combine Pasta and Mussels

    In a large serving bowl, combine the drained linguini and the cooked mussels along with their broth. If using red or white sauce, pour it over the pasta and mussels.

    Garnish and Serve

    Top with additional parsley and freshly grated Parmesan cheese if desired. Serve immediately.
