Ravioli Dough

Meat Filling

Tomato Sauce

Method

Ravioli Dough

  1. 1

    Prepare the Dough

In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix together until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough onto a floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Meat Filling

  1. 3

    Prepare the Filling

In a skillet over medium heat, add the ground beef and cook until browned. Drain excess fat. Add minced garlic and cook for an additional minute.

  2. 4

    Mix the Filling

In a bowl, combine the cooked beef, ricotta cheese, grated Parmesan, chopped parsley, salt, and black pepper. Mix until well combined.

Tomato Sauce

  1. 5

    Make the Sauce

In a saucepan, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.

  2. 6

    Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional minute. Pour in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer and cook for 20 minutes, stirring occasionally.

  3. 7

    Finish the Sauce

Stir in the chopped basil just before serving. Adjust seasoning to taste.

Assembly

  1. 8

    Roll the Dough

After the dough has rested, roll it out on a floured surface until it's about 1/16 inch thick.

  2. 9

    Cut and Fill Ravioli

Cut the rolled dough into squares or circles. Place a small spoonful of meat filling in the center of each piece. Moisten the edges with water and fold over to create a pocket, sealing the edges.

  3. 10

    Cook the Ravioli

Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

  4. 11

    Serve

Plate the ravioli and top with the tomato sauce. Garnish with additional Parmesan cheese and fresh basil if desired.
