Method

Gnocchi Preparation

    Cook Potatoes

    Boil the potatoes in salted water until tender, about 30 minutes. Drain and let them cool slightly.

    Mash Potatoes

    Once cool enough to handle, peel the potatoes and mash them in a large bowl until smooth.

    Make Gnocchi Dough

    Add the flour, egg, and salt to the mashed potatoes. Mix until it forms a soft dough. If the dough is too sticky, add a little more flour.

    Form Gnocchi

    Divide the dough into 4 pieces. Roll each piece into a long rope, about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges.

    Cook Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Marinara Sauce Preparation

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer and let cook for about 20 minutes.

Pesto Sauce Preparation

    Blend Pesto Ingredients

    In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and a pinch of salt. Blend until smooth.

    With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.

    Adjust Flavor

    Taste the pesto and add more salt and pepper if necessary.
