Base Preparation

Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm, but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon until the mixture thickens and coats the back of the spoon.

Add Vanilla
Remove from heat and stir in the vanilla extract. Let the base cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.

Prepare Flavors
Once the base is chilled, divide the mixture into separate bowls for each flavor you want to create.

For chocolate gelato, mix in the cocoa powder. For strawberry gelato, fold in the pureed strawberries. For pistachio gelato, stir in the chopped pistachios.
Churning and Freezing

Churn the Gelato
Pour the flavored mixture into an ice cream maker and churn according to the manufacturer’s instructions until the gelato is thick and creamy.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours or until set.
