    Wash the eggplants thoroughly. Cut off the ends, then slice the eggplants into 1/4-inch thick rounds. Place the slices in a colander and sprinkle with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness.

    Set up three shallow bowls: one with all-purpose flour combined with salt and black pepper, the second with beaten eggs, and the third with breadcrumbs mixed with optional garlic powder and paprika for added flavor.

    Rinse and Dry Eggplant

    After 30 minutes, rinse the eggplant slices under cold water to remove excess salt. Pat them dry with paper towels.

    Dip each eggplant slice in the flour mixture, coating both sides, then dip into the beaten eggs, allowing excess egg to drip off. Finally, coat the eggplant in the breadcrumb mixture, pressing gently to adhere.
