Fried Calamari
Linguini with Red Sauce
Method
Fried Calamari
- 1
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
- 2
Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.
- 3
Coat the Calamari
Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until fully coated.
- 4
Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes or until golden brown. Use a slotted spoon to remove and drain on paper towels.
- 6
Serve
Serve the fried calamari hot with lemon wedges on the side.
Linguini with Red Sauce
- 7
Cook the Linguini
In a large pot of boiling salted water, cook the linguini according to package instructions until al dente. Drain and set aside.
- 8
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- 9
Add Tomatoes and Seasonings
Add the crushed tomatoes, oregano, basil, red pepper flakes, sugar, and salt to the skillet. Stir and let the sauce simmer for about 15 minutes.
- 10
Combine with Linguini
Add the cooked linguini to the skillet, tossing to coat the pasta in the sauce. Stir in the fresh basil.
- 11
Serve
Plate the linguini topped with grated parmesan cheese and serve alongside the fried calamari.
