Method
Pasta Preparation
- 1
Cook the Linguini
In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguini and set aside.
Sauce Preparation
- 2
Make the Clam Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
- 3
Add Clams
Add the drained clams and their juice to the skillet. Stir in the white wine (or vegetable broth) and bring the mixture to a simmer. Cook for about 5 minutes.
- 4
Finish the Sauce
Stir in the chopped parsley and lemon juice. Season with salt and pepper to taste. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
Combine and Serve
- 5
Combine Linguini and Sauce
Add the cooked linguini to the skillet with the clam sauce. Toss to coat the pasta evenly with the sauce.
- 6
Serve
Divide the linguini and clam sauce among serving plates. Garnish with additional parsley if desired. Serve immediately.
