Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs, then mix in the milk, vegetable oil, and vanilla extract.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cake

Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Chocolate Mousse Preparation

  1. 7

    Melt the Chocolate

Break the dark chocolate into pieces and melt it in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  2. 8

    Whip the Cream

In a large mixing bowl, whip the heavy cream and powdered sugar until soft peaks form. Add the vanilla extract and mix until incorporated.

  3. 9

    Beat Egg Whites

In a separate bowl, beat the egg whites until stiff peaks form.

  4. 10

    Combine Mixtures

Gently fold the melted chocolate into the whipped cream until fully combined. Then, gently fold in the beaten egg whites until no streaks remain.

  5. 11

    Chill the Mousse

Transfer the mousse to a bowl or individual serving cups and refrigerate for at least 2 hours to set.

Assembly

  1. 12

    Layer the Cake

Once the cake has cooled, slice it in half horizontally. Place one layer on a serving plate.

  2. 13

    Add Mousse

Spread half of the chocolate mousse over the first layer of cake.

  3. 14

    Add Second Layer

Place the second layer of cake on top and spread the remaining mousse over the top and sides of the cake.

  4. 15

    Garnish and Serve

Garnish with chocolate shavings and fresh berries as desired. Slice and serve with love!
