Preparation
- 1
Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.
- 2
Dredge the Chicken
Set up a dredging station: place the flour in one shallow dish, beat the eggs in another, and place the breadcrumbs in a third dish. Dredge each chicken breast in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing to adhere.
Cooking
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
- 4
Assemble the Dish
In a baking dish, spread half of the marinara sauce at the bottom. Place the fried chicken breasts on top of the sauce. Spoon the remaining marinara sauce over the chicken, then sprinkle with mozzarella and Parmesan cheese.
- 5
Bake
Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
Garnishing
- 6
Serve
Remove the baking dish from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
