Season the chicken thighs with salt and black pepper on both sides.

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic, bell pepper, and sliced mushrooms, and sauté for another 5 minutes until softened.
