Method
Cooking the Tortellini

Boil Water
In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

Cook Tortellini
Add the cheese tortellini to the boiling water and cook according to package instructions, usually about 3-5 minutes, or until they float to the surface.

Drain Tortellini
Once cooked, drain the tortellini in a colander and set aside.
Making the Marinara Sauce

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Stir in the canned crushed tomatoes, dried oregano, dried basil, 1 teaspoon of salt, black pepper, and sugar. Bring the mixture to a simmer.
