Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually incorporate the flour into the egg mixture until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a medium bowl, mix together the ricotta cheese, grated Parmesan cheese, shredded mozzarella cheese, egg yolk, black pepper, and nutmeg until well combined. Set aside.

Marinara Sauce Preparation

    Cook the Sauce

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the crushed tomatoes, dried oregano, salt, and sugar. Bring to a simmer and cook for about 20 minutes, stirring occasionally. Add the chopped fresh basil before serving.

Ravioli Assembly

    Form the Ravioli

    After the dough has rested, roll it out to about 1/8 inch thick. Cut into squares, approximately 3x3 inches. Place a small spoonful (about 1 tsp) of cheese filling in the center of each square. Moisten the edges with a little water and fold the dough over to create a triangle. Press the edges to seal. Repeat until all dough and filling are used.

Cooking the Ravioli

    Boil the Ravioli

    In a large pot of salted boiling water, gently add the ravioli. Cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Serving

    Plate the ravioli and generously spoon the marinara sauce over them. Garnish with additional chopped basil and grated cheese if desired. Enjoy!
