Directions

  1. 1

    Cook the Capellini

Bring a large pot of salted water to a boil over high heat. Add the capellini pasta and cook according to package instructions until al dente, usually about 3-4 minutes. Stir occasionally to prevent sticking.

  2. 2

    Prepare the sauce

While the pasta cooks, heat olive oil in a large skillet over medium heat. Mince the garlic cloves and add them to the skillet, sautéing for about 1 minute until fragrant but not browned.

  3. 3

    Add tomatoes

Halve the cherry tomatoes and add them to the skillet. Cook for about 5-7 minutes until the tomatoes start to soften and release their juices, stirring occasionally.

  4. 4

    Combine pasta and sauce

Once the pasta is cooked, reserve about 1 cup of pasta water, then drain the pasta. Add the drained capellini to the skillet with the tomatoes and garlic, tossing gently to combine.

  5. 5

    Adjust consistency

If the pasta seems dry, add a little reserved pasta water, a tablespoon at a time, until you reach the desired consistency.

  6. 6

    Season and garnish

Tear the fresh basil leaves and add them to the pasta. Season with salt and black pepper to taste. Toss everything together for a minute before serving.

  7. 7

    Serve

Serve the capellini pomodoro warm, topped with freshly grated Parmesan cheese.
