    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter and mix until crumbly.

    Add Wet Ingredients

    Stir in the egg yolks and white wine (or vinegar) until the dough starts to come together.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic and let it rest for at least 30 minutes.

    Roll Out the Dough

    After resting, roll out the dough to about 1/8 inch thick. Use a round cutter to cut out circles (about 4-5 inches in diameter).

    Shape the Shells

    Wrap each dough circle around a cannoli tube, sealing the edges with a bit of water.

    Fry the Shells

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the wrapped tubes in batches until golden brown, about 2-3 minutes. Remove and let cool slightly before carefully removing the tubes.

Ricotta Filling

    In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Add Chocolate Chips

    Gently fold in the mini chocolate chips into the ricotta mixture until evenly distributed.

    Fill the Shells

    Using a pastry bag or a spoon, fill each cooled cannoli shell with the ricotta filling.

    Sprinkle chopped pistachios on both ends of the filled cannoli before serving.
