Marinara Sauce
Method
Calamari Fritti
- 1
Prepare the Calamari
Rinse the fresh calamari under cold water and pat dry with paper towels. Slice the calamari tubes into rings approximately 1/2 inch wide.
- 2
Make the Coating
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, beat the eggs.
- 3
Coat the Calamari
Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Repeat until all calamari pieces are coated.
- 4
Fry the Calamari
In a large, deep skillet, heat vegetable oil over medium-high heat. Once hot, carefully add calamari in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce
- 5
Sauté Garlic
In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté for about 1-2 minutes until fragrant.
- 6
- 7
Simmer
Reduce heat to low and let the marinara sauce simmer for about 20-25 minutes, stirring occasionally.
