Whole Roasted Branzino

    Prepare the Branzino

    Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish.

    Season the Fish

    Rub the branzino with olive oil, then sprinkle salt and black pepper evenly over both sides and inside the cavity. Stuff the cavity with sliced lemon and chopped parsley.

    Roast the Fish

    Place the prepared branzino on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes or until the flesh is opaque and flakes easily with a fork.

Grilled Chicories

    Prepare the Chicories

    While the fish is roasting, cut the chicory heads in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt and black pepper.

    Grill the Chicories

    Preheat a grill or grill pan over medium-high heat. Place the chicories cut side down on the grill and cook for 3-5 minutes until they are charred and tender. Flip and grill for an additional 2-3 minutes.

Castelvetrano Olive Garlic Butter

    Make the Garlic Butter

    In a small mixing bowl, combine softened butter, minced garlic, chopped Castelvetrano olives, lemon juice, and chopped parsley. Mix well until combined.

    Serve

    Once the branzino is done roasting, remove it from the oven and let it rest for a few minutes. Serve the fish with grilled chicories on the side, topped with castelvetrano olive garlic butter.
