Preparation of Zabaglione

    Melt White Chocolate

    In a heatproof bowl, melt the white chocolate over a double boiler or in the microwave in short bursts. Stir until smooth and set aside to cool slightly.

    Whisk Egg Yolks and Sugar

    In a separate bowl, combine the egg yolks and granulated sugar. Whisk together until the mixture is pale and creamy, about 2-3 minutes.

    Add Wine

    Gradually add the sweet white wine to the egg mixture, whisking continuously to combine.

    Cook the Mixture

    Place the bowl over a pot of simmering water (double boiler setup). Continue to whisk the mixture vigorously until it becomes thick and fluffy, about 8-10 minutes.

    Incorporate White Chocolate

    Remove the bowl from heat and gently fold in the melted white chocolate until fully incorporated.

Flavoring and Serving

    Drizzle the lime leaf oil into the zabaglione mixture and fold gently to combine, ensuring not to deflate the mixture.

    Rinse the huckleberries under cold water and gently pat them dry. Reserve a few for garnish.
