    Preheat Oven

    Preheat your oven to 180°C (350°F).

    Prepare Guanciale

    Cut the guanciale into small cubes. In a skillet over medium heat, add 1 tablespoon of olive oil and cook the guanciale until it is crispy, about 5-7 minutes. Remove and set aside.

    Prepare Tomatoes

    Halve the cherry tomatoes and set aside.

    Prepare Baking Dish

    In a baking dish, drizzle 1 tablespoon of olive oil and arrange the halved cherry tomatoes evenly.

    Add Eggs

    Crack the eggs gently on top of the tomatoes in the baking dish, spacing them evenly.

    Season and Add Guanciale

    Sprinkle salt and black pepper over the eggs. Then, scatter the crispy guanciale on top.

    Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.

Finishing Touches

    Add Arugula and Pecorino

    Remove the dish from the oven. Immediately scatter fresh arugula over the top and sprinkle grated pecorino cheese.
