Mix the Ingredients
In a large mixing bowl, combine the bread flour, sourdough starter, and water. Mix until a shaggy dough forms.

Knead the Dough
On a lightly floured surface, knead the dough for about 10 minutes until it becomes smooth and elastic.

Add Salt and Flavorings
Add the salt, dried cherries, and anise seeds to the dough and continue kneading for another 5 minutes until fully incorporated.

First Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for 4 to 6 hours, or until doubled in size.

Shape the Dough
Once the dough has risen, gently deflate it and turn it out onto a floured surface. Shape it into a round loaf.

Transfer the shaped dough to a proofing basket dusted with rice flour, cover it, and let it rise for an additional 2 hours.

Preheat the Oven
About 30 minutes before baking, preheat your oven to 220°C (428°F) with a baking stone or a baking sheet inside.

Score and Bake
Carefully turn the dough onto the preheated baking surface, score the top with a sharp knife, and bake for 30-35 minutes until golden brown and hollow sounding when tapped.

Remove the bread from the oven and let it cool on a wire rack for at least 30 minutes before slicing.
