    In a bowl, combine 2 cups of mixed olives (green, black, kalamata) with 2 tablespoons of olive oil, 1 teaspoon of dried oregano, and a pinch of red pepper flakes. Toss well and let marinate for at least 30 minutes.

    Thread 12 cherry tomatoes, 12 mini mozzarella balls, and fresh basil leaves onto skewers. Drizzle with balsamic glaze and a sprinkle of salt before serving.

    Preheat the oven to 350°F (175°C). In a skillet, sauté 1 cup of chopped spinach in 1 tablespoon of olive oil until wilted. Pour over the spinach and cook until the edges set, then transfer to the oven and bake for 15-20 minutes until fully set.

    Trim the woody ends off a bunch of asparagus. Toss with olive oil, salt, and pepper. Grill over medium heat for 5-7 minutes until tender. Drizzle with fresh lemon juice before serving.

    Prepare a savory pancake batter using 1 cup all-purpose flour, 1 cup buttermilk, 2 eggs, and salt. Cook pancakes on a griddle until golden brown. Top each pancake with slices of smoked salmon and a dollop of crème fraîche.
